Cooking Steak Quesadillas Surrounded by Florida Alligators at Myakka River State Park

There are outdoor cooking spots… and then there are real Florida outdoor cooking spots.

For this episode of Cooking on the Road, I headed out to Myakka River State Park with a bag full of cast-iron gear, shaved beef, charcoal, and absolutely no idea how many alligators I was about to see.

This cook ended up being one of those days that perfectly sums up what Cooking on the Road is really about.

Not just the food.
Not just the scenery.
But the feeling of getting out somewhere that actually feels different from everyday life.

This particular cook was done on a charcoal grill tucked a little farther off the beaten path than some of my other videos. Right on the water. Quiet. Just the sound of birds echoing through the trees and the occasional movement in the water remind you that you are very much in wild Florida.

And yes… the gators were everywhere.

We spotted three around the cooking area itself, but the real insanity happened just beyond the park before and after filming. At one point, two alligators started chasing each other through the water, which honestly felt like something out of a nature documentary.

That is part of what makes cooking outdoors in Florida so unique. You are not cooking in a controlled environment. You are stepping directly into the landscape.

For the meal, I kept it simple but solid:

  • shaved beef
  • peppers
  • onions
  • melted cheese
  • toasted tortillas over charcoal

Nothing fancy. Just real food cooked outside over live fire.

One thing I continue to realize with Cooking on the Road is that simple meals somehow taste better when there is a reason you had to go there to make them, carrying the gear in. Smelling charcoal light under the trees. Hearing birds while onions hit the pan. Watching the water while the tortillas crisp up.

That changes the experience.

The steak quesadillas themselves turned out incredible. Crispy on the outside, cheesy in the center, smoky from the charcoal, and enough shaved beef packed inside to make the whole thing feel worth the trip.

But honestly, the bigger memory from this one will probably always be the setting.

Florida gets talked about a lot online, but there is still a version of Florida out there that feels quiet, wild, and untouched once you get away from the main roads. Myakka still has some of that feeling.

And cooking outside in places like this reminds me why I started doing Cooking on the Road in the first place.

Not to make perfect recipes.

Just to get out of the house, go somewhere worth going, and make something real outside.
